Polka Dot Cookies
As promised…this recipe is on the back of the Guittard Green Mint Chips package, so if you don’t want to print it off my blog you can always find it. Provided they sell this brand where you live. I never heard of it before, but my daughter bought it at Save Mart, which is a Central California grocery chain. Part of the fun of this recipe is the pretty green color against the chocolate cookie.
Anyway, if you like mint, you’ll love these. Soft, chewy and pretty. If you don’t like mint, you might be able to use the same recipe with a different kind of chip. The make everything imaginable now, don’t they?
Ingredients:
2 C semi-sweet chocolate chips
1/2 C butter (we used Earth Balance — a fabulous product, BTW)
1-1/2 C all-purpose flour
1/2 tsp baking soda
1/8 tsp salt
3 large eggs
1/2 sugar
2 tsp vanilla
2 C Guittard Green Mint Chips
Directions:
Preheat oven to 350-degree F.
In top of double boiler over low hear, melt semi-sweet chips and butter, stirring constantly until smooth. Set aside to cool. In small bowl combine flour, baking soda and salt; set aside.
In large bowl beat eggs, sugar and vanilla until light. Blend in melted chocolate then dry ingredients. Stir in green mint chips and chill for 10-15 minutes or until stiff. Drop by well-rounded teaspoonfuls onto greased cookie sheets. Bake 8-10 minutes; cookies will be soft in the centers but will firm up as they cool.
I just ate one — with a glass of soy milk –to confirm that they’re yummy.
