At this time last year, we hosted a fabulous Easter celebration with friends and family from as far away as San Diego making the trip. We laughed, played wiffle ball golf, hunted a gazillion eggs, including colorful cascarones (confetti eggs), and enjoyed food galore.

This year will be quite different. We’re lucky to have neighbors with chickens, so our youngest grandgirls will be able to hunt colored eggs, and there will be ham, but I will devote most of the weekend to reading. It’s my escape.

FINALLY FRIDAY: I mean, LABOR DAY WEEKEND.

Happy Labor Day weekend, my friends! (And I do mean labor.)

This past week was one of the most physically taxing of my whole summer. As I may have mentioned previously, our construction company is working on a whole-house remodel, and on Monday, two of my husband’s brothers arrived to help. I can’t tell you how impressed I am by the Salonen boys’ (husband and son, included) work ethic. Four extra hands helped move the project forward by weeks, not days.

Brother Bob is a plumber back in South Dakota. His skill saved the day with this tricky corner sink.

Here’s an “after” shot. This small bath is part of the bonus living space we’re calling: the apartment.

My brother-in-law, Don, is a chef by trade and training, but he’s super handy when it comes to everything else. He and I made a pretty good team when it came to hanging exterior lights, trimming trees and clean up–lots and lots of clean up. We also made some pretty great meals!

FINALLY FRIDAY: “Chilly Nut Balls” – my made-up recipe

“Chilly Nut Balls”

That’s what I’m calling my simple, easy-to-make, healthy, summer snack recipe.

Reviews from my family: “Chewy. Cool. I like it.” “Not bad. Pretty good, actually.” (from my hubby who spurns anything too nutritional.) “Super yummy. Can I have another?” And my personal fave: “Oh, my! Yes! Yes! Yes!”

DISCLAIMER: I’m a pantster–in writing and in cooking. I work with what I have in the cupboard. I don’t measure, and I never make any dish exactly the same way every time. Consider that my gift to you–you’re not locked into any formal recipe here. Buy yummy stuff you like, experiment with small batches until you find what works for you, and, as long you include chocolate, you can’t go wrong.

Deb’s “sorta” recipe: CHILLY NUT BALLS

In a bowl, combine (measurements are extremely approximate):

1/2 C almond butter

1/4 C Nutella

1/2 C applesauce

Then add to mixture:

1/2 C sunflower seeds (roasted & salted are best, IMO)

1/2 C raisins

3/4 C chocolate chips (you can tell where my priorities are)

Stir together before adding:

1 C oatmeal (I bought the 1-minute kind by mistake and like it best in this recipe). You may need more to give desired consistency. You don’t want them too sticky to form into balls.

Cover and chill one hour, then shape into balls.

Keep refrigerated, serve and snack to your heart’s content.
